This salmon-pink rosé (the intensity varies according to the vintage) has made a major contribution to the reputation of Neuchâtel wines. It is made from pinot noir grapes, which are macerated for about 24 hours in order to give it its pink colour. The wine has an intense bouquet of red berries and is full bodied. Of an exceptional quality, recognised worldwide, it can be drunk as an aperitif, or with salmon, lamb or Mediterranean cuisine.
The most important red grape grown in Switzerland, the Pinot Noir has been planted in many regions across the world, of which the best known is undoubtedly Burgundy. Like the Chardonnay, the Pinot Noir needs a particular climate to bring out all its potential. When grown in regions that are too hot, the alcoholic content of the wine becomes too high, at the expense of the finesse of its bouquet. High quality production also requires a relatively small number of grapes on each vine.
